Acini di pepe pasta with Spinach, feta

Ingredients
- 1 tbs olive oil
- 1/4 cup shallot, finely chopped
- 2 cups dried acini de pepe pasta
- 1 tsp minced garlic
- 3 cups begetable broth
- 1 cup spinach leaves chiffonade
- 3/4 cup feta cheese, crumbled
- 2 tsp lemon zest
- 1 tbs fresh lemon juice

Preparation
Step 1
In a pot, heat oil over medium heat. Add onion & cook until translucent, approx 4 mins.
Add pasta & garlic. continue to cook, stirring often for 2-3 mins or until pasta turns golden brown. add broth, bring to boil, reduce heat to low and cover.
Cook for 10-12 mins or until tender and broth has been absorbed. remove from heat.
Stir remaining ingredients, season with salt and pepper and serve.
