Sweet and Spicy Sweet Potatoes

These are great for people who don't like to eat their veggies (like myself). They are easy, and go great with a variety of meals.

Didn't have sweet potatoes one day, so I used yams instead, and they were to die for. Might just have to make this mistake again soon.

Ingredients

  • 2-3 large sweet potatoes (or yams), peeled and cubed
  • 2 tablespoons olive oil
  • 1-2 tablespoons packed brown sugar
  • 1/2-1 teaspoon cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon poultry, steak, or fajita seasoning
  • 1/2 teaspoon chili powder
  • 1 pinch cayenne pepper

Preparation

Step 1

Preheat oven to 425 degrees. Cover baking sheet with foil and lightly coat with nonstick cooking spray.

Place chopped potatoes in Ziplock bag with olive oil. Seal and shake to coat. Add in all other ingredients. Shake. Pour on baking sheet and spread into one layer.

Bake 15 min, flip, bake 10-15 more minutes, until tender. Serve hot.
