Potato Latkes

Ingredients

  • 4 pounds Russet potatoes
  • 2 very large onions
  • 4 large eggs
  • fresh chopped thyme
  • course salt and pepper to taste
  • peanut oil for frying

Preparation

Step 1

Peel potatoes and grate in the food processor using the grating tool. Do not push down with the plunger in the food tube to avoid extra liquid and you should get long shreds of potatoes.
Grate the onions.

Drain potatoes and dry extracting as much of the liquid as possible. Add the onions, eggs, thyme, salt and pepper. Stir only once to combine, again to avoid extra liquid.

Heat oil in skillet until almost smoking. Drop potatoes in the oil and flatten. Cook until golden brown.

Place latkes on a wire rack to drain. Reheat on wire racks.
