Lentil Chili

Note: This recipe called for Tasty Bite Madras Lentils "10-ounce packs" - and only states to simmer for "5 to 10 minutes." These may be pre-cooked or canned lentils - so recipe may require a longer cooking time if using packaged dry lentils.

Ingredients
- 1 tbsp cooking oil
- 1/4 cup chopped onion
- 1/2 cup chopped green bell pepper
- 3 (10-ounce packs) lentils
- 1 cup canned or fresh diced tomatoes
- Dash of hot sauce, crushed red pepper or cayenne pepper (optional)
- Taco chips (if desired)
- Rice (if desired)
- Shredded cheese (if desired)

Preparation
Step 1
Heat oil in a saucepan over medium-high heat. Add onion and cook until soft and translucent.
Add bell pepper and continue cooking until soft.
Add lentils, tomatoes and hot sauce, mixing until well blended. Simmer for 5 to 10 minutes
Serve with taco chips or over rice. Or add shredded cheese and eat as is.
