Caramel Apple Cake

Ingredients
- For the Cake:
- 2 sticks butter
- 1 cup brown sugar
- 1 cup white sugar
- 3 eggs
- 1 tsp vanilla
- 3 1/2 cups of cake flour
- 2 tsp baking powder
- 1 12 oz can evaporated milk
- 2 tsp apple pie spice
- 2 large apples, peeled and chopped
- 7 oz (1/2 bag) cubed caramels, chopped
- For Icing: (I would double this to make more icing)
- 7 oz (1/2 bag) cubed caramels
- 3 tbsp heavy cream
- 1 stick butter
- 3 cups powdered sugar

Preparation
Step 1
Preheat oven to 350 degrees. Grease two 9" cake pans, line with parchment paper, and grease again.
Cream together two sticks butter along with brown and white sugars.
Add eggs and vanilla. Mix well. Add cake flour and baking powder. Mix. Add evaporated milk and apple pie spice. Mix. Add apples and chopped caramels and stir batter well.
Pour into prepared pans and bake for 35 minutes or until toothpick inserted in cake comes out clean.
To make icing, melt caramels and cream over low heat. When melted, remove from heat and cool slightly.
Place a stick of butter and powdered sugar into bowl of mixer. Pour cooled caramel mixture over and mix.
Frost cake.
