Hot Spinach-Artichoke Dip

Ingredients

  • 1 10oz pkg. frozen chopped spinach
  • 2 cans artichoke hearts
  • 1/2 C. mayo
  • 1/2 C. sour cream
  • 1 C. freshly grated parmesan
  • 1 C. grated pepper jack cheese

Step 1

1. Heat spinach in a microwave oven on high for 5 min. and squeeze dry.

2. Drain the artichoke hearts and coarsley chop in food processor.

3. Combine all ingredients except the jack cheese in a large bowl. Stir well. Scrape into a casserole dish that has been sprayed with non stick cooking spray.

4. Sprinkle with jack cheese and bake 30 min.
