Ingredients

  • Cake:
  • 2 Cups Granulated Sugar
  • 1.5 CUps Vegetable Oil
  • 4 Whole Eggs
  • 1 Cup Cake FLour
  • 1 Cup All-Purpose Flour
  • 2 tsp Baking Soda
  • 3 Cups Raw Finely Ground Carrots
  • 4 oz. Finely CHopped Walnuts
  • Frosting:
  • 1.5 lbs. Powder Sugar
  • 12 oz. Cream Cheese, room tempeture
  • 1 Tbsp Vanilla Extract
  • 2 oz. Butter

Preparation

Step 1

Preheat the oven to 300 degrees F.
In a bowl, mix sugar, vegetable oil and eggs.
In another bowl, mix flour, baking soda, salt and cinnamon.
Fold the dry ingredients with the wet ingredients, blend well.
Fold in carrots and walnuts.
Distribute batter evenly into 3 9" generously greased pans.
Bake 50-60 minutes.
Cool cakes completely before baking.

For the frosting:
Mix cream cheese, butter, vanilla and powdered sugar together until well blended.

When cakes are cool, place first layer at center of cake plate and spread frosting evenly on top. Continue this with the second and third layer also. When cakes are all layered, spread frosting to cover top and sides of cake.

Refrigerate until needed.
