Spiced Souffles with Lemon Whipped Cream
Ingredients
- butter or margarine softened
- sugar
- 1/4 cup butter
- 1/4 cup flour
- 1 1/4 cups milk
- 2/3 cup sugar
- 1/4 cup molasses
- 2 tsp. ginger
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 tsp. vanilla
- 5 large eggs separated
- lemon cream
- 1 cup whipping cream
- 2 Tbs. sugar
- 1 Tbs. lemon rind
- 1 Tbs. lemon juice

Preparation
Step 1
grease bottom and sides of 8 6oz. ramekins evenly with butter
lightly coat bottom and sides with sugar
place in 13x9" baking dish, set aside
melt 1/4 cup butter over med.
whisk in flour
cook 1 min. whisking constantly
gradually add milk, whisking constantly until thickened
remove from heat
whisk in 2/3 cup sugar and next 5 ingredients
beat egg yolks at high 4-5 min.
until thick and pale
gradually whisk 1/4 of hot mix into yolks
add remaining hot mixture
whisk constantly
cook over med. 1 min.
remove, let stand 20 min.
beat egg whites on high to soft peaks
gently fold egg whites into milk mix
spoon evenly into ramekins, filling to top
bake at 400 for 18-20 min. or until puffed and set
serve immediately
lemon cream
beat whipping cream at high speed until foamy
gradually add sugar, lemon rind and juice
beat to soft peaks
