Spinach Artichoke Burgers
Ingredients
- 1 lb. ground chicken or turkey breast
- salt and pepper
- zest of 1 lemon
- a couple handfuls of freshly grated parmigiano-reggiano cheese
- 2 garlic cloves, 1 finely chopped, 1 peeled
- 1 10oz. package frozen chopped spinach, thawed and dried in paper towel
- 1 Tbs. thyme (tsp.)
- evoo for drizzling
- 4 thick cut slices beefsteak tomato
- 1 14oz. can artichoke hearts drained and thinly sliced
- 8 thin slices provolone cheese
- french bread

Preparation
Step 1
preheat grill, grill pan, or large nonstick skillet
if using pan or skillet, preheat broiler
place ground chicken in med. bowl and season with salt and pepper
add lemon zest, cheese, garlic, spinach, thyme, and a drizzle of evoo (about 2 Tbs)
form into patties
cook about 6 min. on each side until firm and cooked through
if cooking on grill place bread next to patties, grill on both sides and remove
if not broil bread on both sides
rub toasted bread with remaining garlic
place on plates and top with tomato, season with salt and pepper
in last 2 min of cooking divide hearts evenly over burgers
cover each with 2 slices of provolone
close grill lid or tent pan with foil to melt cheese
place on top of tomato and serve
