Ingredients
- Cake:
- 3 eggs
- 1 cup sugar
- 2/3 cup prepared pumpkin
- 1 tsp lemon juice
- 1 tsp baking powder
- 3/4 cup flour
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- Filling:
- 1 1/4 cups powdered sugar divided (1/4 on cake)
- 6 ounces cream cheese
- 4 Tbls margarine/butter
- 1/2 tsp vanilla
- 1/4 cup pecans finely chopped
- 1/4 c coconut

Step 1
Preheat oven 350
Beat eggs and sugar together stir in pumpkin, lemon juice, then add dry ingredients. Stir well. Grease jelly roll pan well. Spread mixture evenly and bake for 20 minutes.
Turn out onto damp dish towel. Sprinkle cake with powered sugar (1/4 cup) immediatel roll up to make long roll with towel (thin towel)let cool. Mix filling, unroll cake and spread the filling onto cake. Roll up again (without towel) wrap in aluminum foil and refrigerate.
