Grilled Salmon with Sweet Onions & Red Bell Pepppers

Ingredients
- 1/4 C. Soy Sauce
- 1/4 C. Brown Sugar
- 2 Tbsp. Extra-Virgin Olive Oil, plus more for drizzling
- 4 -6 oz. Salmon Fillets, with skin
- 2 Sm. Sweet Onions, halved crosswise but not peeled
- 2 Red Bell Peppers, stemmed, cored & quartered lengthwise
- 1 tsp. Balsamic Vinegar
- Salt & Freshly Ground Black Pepper
- 1 tsp. Chopped Thyme
- 1 Tbsp. Chopped Marjoram

Step 1
In lg. shallow dish, combine the soy sauce & brown sugar with the 2 Tbsp. of oil; add the salmon & coat well. Cover & refrigerate for 1 hr. Light the grill. Drizzle the cut sides of the onions with oil & grill over moderately high heat, cut side down, till nicely charred & starting to soften, approx. 15 min. Turn the onions & cook till tender, approx. 15 min. longer. Push the onions to the sides of the grill. Oil the peppers & grill them, skin side down, away from the hottest part of the grill, till lightly charred, approx. 5 min. Turn & grill for 5 min. Push them over to the onions. Remove salmon from the marinade & grill, skin side down, for 8 min. Turn & grill till salmon is just cooked through, 4 min. longer. Drizzle onions with oil & balsamic vinegar. Season with salt & papper & sprinkle with thyme. Transfer salmon, onions, & peppers to plates, sprinkle with marjoram and serve.
