Ingredients

  • 3/4 cup sugar
  • 1/2 cup cornstarch
  • 3 cups milk
  • 2/3 cup fresh lemon juice
  • 1 1/2 tsps grated lemon peel
  • 1/4 tsp vanilla extract
  • 2 cups reduced fat whipped topping
  • 2 drops yellow food coloring (optional)

Step 1

1. In a large saucepan, combine sugar and cornstarch. Gradually stir in milk until smooth. Bring to boil over medium heat, stirring constantly.
2. Cook and stir for 3 mins or until thickened and bubbly. Remove from heat.
3. Stir in lemon juice, lemon peel, and vanilla. Set saucepan in large pan filled with ice. Stir until mixture reaches room temperature, about 5 mins.
4. Fold in whipped topping and food coloring. Spoon into dessert dishes. Refrigerate for at least 2 hr before serving.
