Black bean and quinoa soup

Ingredients
- 2 TB olive oil
- 2 c chopped red onion (I used yellow)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp smoked paprika (can use regular)
- 1/4 tsp red pepper flakes
- 1/2 tsp black pepper
- 1 tsp grated garlic
- 1/2 c red quinoa (used regular)
- 3 cups veggie broth
- 3 (15 oz) cans black beans, drained and rinsed
- 2 TB chopped cilantro
- 1-2 TB lime juice
- 1/2 c light cheddar cheese
- 1/2 c 'faux' cream fraiche (sour cream is perfect)

Step one
Place the oil in a saucepan, when hot add the onion, chili powder, cumin, tumeric, smoked paprika, red pepper flakes, and black pepper. Cook and stir until the onions are wilted about 5 minutes. Add the garlic and stir until fragrant. Add the quinoa and cook and stir an additional 5 minutes.
Step two
Add the veggie broth, beans and bring to a simmer. Cover and cook until the quinoa is tender about 12-15 minutes.
Step three
Remove from the heat and puree with an immersion blender until desired consistency. Stir in the cilantro and lime juice to taste. Serve garnished with the sour cream and cheddar cheese.
