Creamy Lemon Chicken

  • 1/4 cup all purpose flour
  • 4 boneless skinless chicken breasts
  • 1 can progresso recipe starts creamy roasted garlic cooking sauce
  • 3 tablespoon lemon juice
  • Uncle Ben's Ready Rice Original if desired

Step 1

Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down. Gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Mix flour with 1 teaspoon salt and 1/2 teaspoon pepper in a shallow dish. Dip each chicken breast into the flour mixture, coating all sides. In a 10 inch heat 2 tablespoon vegetable oil over medium high heat. Cook chicken in oil 6 to 8 minutes or until brown, turning once. In a small bowl, mix cooking sauce and lemon juice. Pour sauce mixture over chicken. Reduce heat to medium-low, simmer 5-10 minutes or until juice of chicken is clear when center of thickest part is cut (heat to at least 165 degree) serve with Uncle Bens Ready Rice Original
