Smashed Red Skin Potatoes

Ingredients

  • 4 lbs baby red potatoes, quartered
  • 1-1/2 tsp salt
  • 1 cup heavy cream
  • 1 stick unsalted butter
  • 1/2 cup sour cream
  • 3/4 tsp pepper

Preparation

Step 1

Boil potatoes until tender.

In small saucepan over low heat, heat together heavy cream and butter for 5 minutes or until butter is melted and mixture is heated through.

Drain potatoes and transfer to a large bowl. With potato masher, smash potatoes together with hot cream mixture until well blended. Add sour cream and 1-1/2 tsp salt and the pepper. Blend in with potato masher; continue to mash until desired consistency is achieved.
