Ingredients
- 1 1/3 cups sugar
- 3/4 cup butter or margarine
- 2 eggs
- 2 cups flour, sifted
- 1/2 teaspoon lemon rind
- 1 (21-ounce) can LUCKY LEAF® Premium Apricot Pie Filling
- Granulated or Powdered Sugar

Preparation
Step 1
Preheat oven to 325°F. Grease an 8x12-inch pan.
Cream butter and sugar. Add eggs singly and beat until light and fluffy. Add flour and lemon rind.
Put 1/2 dough in prepared pan and cover with LUCKY LEAF Premium Apricot Pie Filling. Drop remaining dough over top. (Sprinkle with granulated sugar before baking or sprinkle powdered sugar after shortbread has cooled). Bake for 45 minutes.
