Ingredients

  • 3 cups all-purpose flour
  • 1 T. baking powder
  • 1 tsp. kosher salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. oregano
  • 1/4 tsp. red pepper flakes
  • 1 cup zucchini, shredded
  • 1/2 cup minced fresh chives
  • 1/2 cup Asiago cheese, shredded
  • 1/4 cup chopped fresh parsley
  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup veg. oil

Preparation

Step 1

Preheat oven to 325.; coat a 4-1/2 x 8-1/2 loaf pan with Pam.

Blend 1st 6 ingredients in large bowl. Add next 4 ingredients; toss to combine.

Whisk milk, eggs and oil together, then fold into dry mixture just until moistened. Pour batter into pan and bake 50-55 min. Let cool 10 min. in pan, then remove and put on cooling rack for 20 min. before slicing.
