Ingredients
- 6 ears of corn - shucked and cleaned
- 1 red pepper
- 2 Tbs. olive oil
- 1 Tbs. Chili Lime Rub
- 2 tomatoes diced
- 1 avocado peeled, pitted and diced
- 2 Tbs. fresh cilantro chopped
- 1/2 cucumber, peeled, seeded and diced
- 1/4 cup shredded carrots
- Juice of 1/2 lime
- Salt and pepper to taste

Preparation
Step 1
• Brush corn with oil and grill over medium high heat for 10 minutes turning occasionally.
• Remove corn from cob, mix with the remaining ingredients, chill and serve.
