- 1 1/2 Cups Flour
- 3/4 Cups Sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 Cup Unsweetened Apple Sauce
- 1 tsp Vegetable Oil
- 1 Egg
- 1/2 Cup Lowfat Milk
- Grated Zest of 2 Large Lemons
- Yellow Food Coloring

Step 1
Preheat oven to 350. Stir all ingredients in a bowl until just combined (avoid over mixing). Place liners in mini-muffin pans and fill halfway with batter. Bake for 10 minutes.
