Lemon Parmesan Crusted Chicken Breasts

Ingredients

  • 1/2 cup all purpose flour
  • 1 egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fine bread crumbs
  • 1 T. lemon zest
  • salt and pepper to taste
  • 4 boneless, skinless chicken breasts
  • 1/4-1/2 cup olive oil
  • 2 T fresh parsley chopped

Preparation

Step 1

Place flour in a baking dish or on a large plate. Season with salt and pepper and combine. Lightly beat egg and place in another baking dish. In another baking dish or large plate combine grated Parmesan cheese, bread crumbs, and lemon zest. Season with salt and pepper and combine well. Preheat skillet over medium heat with enough oil to cover the bottom of the pan and heat until oil shimmers.

Dip each breast in seasoned flour, then the beaten egg and then coat with the cheese breadcrumb mixture and fry in the skillet. Fry the chicken breasts for 3-4 minutes per side until fully cooked (165 degrees).
