Mexican Potato Bites

Ingredients
- 20 small new red potatoes
- 1 Tbs. vegatable oil
- 6 oz. Mexican chorizo removed from casing
- 1/2 C. shredded Monterey Jack cheese
- 2 green onions, thinly sliced
- Sour cream

Step 1
Heat oven to 425 and place rack in upper third of oven. Put potatoes on baking sheet and drizzle with oil, season with salt and toss. Roast until potatoes are fork tender, about 30 mins. On medium heat, cook chorizo stirring occassionally until browned. Slice potatoes in half and scoop out flesh, leaving about a 1/4" shell. Top with chorizo and cheese, Bake until skins are warmed and cheese is melted, about 5 mins. Remove from oven and garnish with green onion and sour cream.
