Ingredients

  • 8 large red potatoes (or several small)
  • 2 T extra virgin olive oil
  • 1/2 t salt
  • 1/4 t pepper
  • 1 T chopped fresh parsley leaves (optional)
  • 1 t chopped fresh tyme leaves (optional)

Preparation

Step 1

Preheat to 450
Slice each potato thinly without cutting all the way through
Drizzle with some oil, salt and pepper
Microwave 12-15 minutes
Drizzle with little more oil between slices
Roast in oven 25 minutes or till lightly browned, edges will be slightly crispy
Remove from oven and sprinkle with herbs
