Peppered Beef & Garlic Mayonnaise Sauce

Ingredients

  • Peppered Beef
  • 2 tsp. coarse black pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. each rosemary & leaf thyme (or 1/4 tsp. ground thyme)
  • 1/2 tsp. each oregano & poultry seasoning
  • 1 T olive oil
  • 1 (3 lb) eye of round, boneless rib eye rump or tenderloin
  • Garlic Mayonnaise Sauce
  • 1/2 c each mayo & sour cream
  • 1 tsp. lemon juice
  • 1/2 tsp. each garlic powder and oregano.
  • Mix well chill and serve with peppered beef.

Preparation

Step 1

In a small bowl combine spices; mix well. Rub meat w/olive oil & spices until well coated. Place roast on rack, bake at 500 degrees for 15 min. Reduce oven temp to 350, bake an additional 45 min for rare.
