Ingredients
- Peppered Beef
- 2 tsp. coarse black pepper
- 1 tsp. garlic powder
- 1/2 tsp. each rosemary & leaf thyme (or 1/4 tsp. ground thyme)
- 1/2 tsp. each oregano & poultry seasoning
- 1 T olive oil
- 1 (3 lb) eye of round, boneless rib eye rump or tenderloin
- Garlic Mayonnaise Sauce
- 1/2 c each mayo & sour cream
- 1 tsp. lemon juice
- 1/2 tsp. each garlic powder and oregano.
- Mix well chill and serve with peppered beef.

Preparation
Step 1
In a small bowl combine spices; mix well. Rub meat w/olive oil & spices until well coated. Place roast on rack, bake at 500 degrees for 15 min. Reduce oven temp to 350, bake an additional 45 min for rare.
