Ingredients

  • 9 " pie shell
  • 1/4 c. butter
  • 1/2 c. packed brown sugar
  • 4 med. tart apples, peeled & cut 1/2" pcs.
  • 1 1/2 pumpkin pie spice, divided
  • 1 or 2 tbsp. all purpose flour
  • 1/2 c. caramel ice cream topping
  • 1/2 c. chopped pecans
  • 1 pkg. cream cheese, softened
  • 1/4 c. sugar
  • 1 egg
  • 1 tbsp. lemon juice
  • 1 tsp. vanilla
  • whipped topping

Preparation

Step 1

Bake pie shell. In a large skillet over med. heat, melt butter & brown sugar. Stir in apples and 1 tsp. pumpkin pie spice. Simmer for 12-15 mins, stirring frequently, or till tender.
Stir in flour. Cook & stir for 1 min. Drizzle caramel topping over pie shell. Sprinkle w/ pecans. Spoon apple mixture on top. Set aside. In mixing bowl, combine cream cheese, sugar, egg, lemon juice, and vanilla. Beat till smooth. Pour over apples. Bake at 350 for 35-45 min. or till knife inserted comes out clean. Cool on wire rack. Chill completely. Top with whipped topping and sprinkle with remaining pumpkin pie spice.
