- 2 lbs baking apples, peeled and sliced
- 1 Tblspn lemon juice
- 3/4 cup sugar
- 2 Tblspn all-purpose flour
- 1 tspn cinnamon
- 1/4 tspn nutmeg
- 1/8 tspn salt
- 1/2 tspn almond extract
- 1/2 cup raisins (optional)
- 1 (2 crust 9-inch) pastry

Place metal rack on turntable. Preheat oven to 400. In large mixing bowl, toss sliced apples with lemon juice.
In small mixing bowl, combine sugar, flour, cinnamon, nutmeg and salt then add to aaples and toss until well coated.
Add almond extract and raisins.
Pour apple mixture into pastry-lined pie plate. Dot with butter. Top with remaining pastry and flute the edges.
Slit top of pastry to vent.
Convection bake 55-60 minutes until crust is lightly brown.
