Tequila Lime Coconut Macaroon Bars

Ingredients
- 2 c. flour divided
- 2 c. sugar divided
- 1/2 c, butter cut into pieces
- 4 eggs
- 1 1/2 c. sweetened coconut
- 1 t lime zest
- 1/3 c/ lime juice
- 3 T tequila
- 1/2 t. baking powder
- 1/4 t salt

Step 1
Preheat oven to 350. Line bottom and sides of 13 x 8 pan with foil allowing 2 in. excess extend over sides.Stir 1 3/4 c. flour and 1/2 c. sugar. cut in butter with pastry blender until crumbly. Line bottom of prepared pan.Bake at 350 for 20 to 23 minutes until golden brown. Meanwhile whisk egggs in a medium bowl until smooth;whisk in coconut next 3 ingredients and remaning 1 1/2 c. sugar. Stir together baking powder, salt and remaining 1/4 c. flour;whisk into egg mixture. Pour over hot crust. Bake at 350 for 25 minutes or until filling is set. Let cook 1 hour on a wire rack. Lift from pan using foil overlap as handle. Remove foil and cut in squares.
