Ingredients
- 4 t dark rum
- 4 t warm water
- 3 T raisins
- 1/3 c coarsely chopped fresh pineapple
- 1 T sugar
- 2 t [arrowroot]
- 3 T toasted coconut
- 3 T toasted chopped pecans

Preparation
Step 1
1. In bowl, combine rum & water.
2. Stir in raisins.
3. Cover, set aside.
4. Place pineapple in food processor. Cover & process until mixture is smooth. (~3T)
5. In saucepan, combine pineapple, sugar & arrowroot.
6. Cook & stir until thickened & bubbly.
7. Stir in raisin mixture, coconut & pecans.
8. Cover; chill for @ least 1 hr.
