Cheddar Bacon Scones

Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 1 T. baking powder
  • 1/2 tsp. salt
  • 4 T. cold butter, in small chunks
  • 3/4 cup buttermilk + 1-2 T.
  • 1 egg
  • 1/2 cup cooked and crumbled bacon
  • 1/2 – 1 cup shredded cheddar cheese
  • 1/2 cup green onion (about 3 onions, sliced all the way to the ends.)

Preparation

Step 1


In a large bowl, combine flour, sugar, baking powder and salt. Cut in cold butter using a pastry cutter, fork, or your hands.
In a separate small bowl, combine egg and ¾ cup buttermilk. Add this to the flour mixture, and stir to combine. It should form a heavy, sticky dough.
Add cheese, bacon, and sliced onions, and stir to combine.
Form dough into a flat round disc, about 8 inches in diameter, on your baking sheet. Cut into 12 triangles.
Brush top with remaining 1-2 T. buttermilk, and sprinkle with shredded cheddar to garnish.
Bake at 375 for 20-22 minutes, until slightly brown on top.
