Ingredients

    lbs boneless pork loin

  • salt and pepper

  • 1

    T canola oil

  • 1/2

    c buttermilk

  • 1

    T mayo

  • juice of a half lemon

  • 1

    T chopped dill

  • 1

    T chopped tarragon

  • 1

    T chopped parsley

  • 1

    T fresh chives

Directions

Preheat oven to 350. Season pork with salt and pepper. Heat cast iron skillet over high heat. Add oiul and then the pork. Lower the heat to med-high, and sear pork on all sides till golden brown , 8 - 10 minutes. Place the pan in the oven and roast pork for 25-30 minutes. Let meat rest for 10 minutes before slicing. Combinebuttermilk, mayo, lemon juice and herbs. Season sauce with salt and pepper.
