Roast Pork Loin w/ Herbed Buttermilk Sauce

Ingredients

  • 2.5 lbs boneless pork loin
  • salt and pepper
  • 1 T canola oil
  • 1/2 c buttermilk
  • 1 T mayo
  • juice of a half lemon
  • 1 T chopped dill
  • 1 T chopped tarragon
  • 1 T chopped parsley
  • 1 T fresh chives

Preparation

Step 1

Preheat oven to 350. Season pork with salt and pepper. Heat cast iron skillet over high heat. Add oiul and then the pork. Lower the heat to med-high, and sear pork on all sides till golden brown , 8 - 10 minutes. Place the pan in the oven and roast pork for 25-30 minutes. Let meat rest for 10 minutes before slicing.

Combinebuttermilk, mayo, lemon juice and herbs. Season sauce with salt and pepper.
