Pasta with no cook tomato sauce
This is an excellent "sauce" that tastes fresh and wonderful!

Ingredients
- 2 lb. ripe tomatoes, cored and chopped
- 2 Tbsp extra-virgin olive oil
- 2 Tbsp minced fresh basil
- 1 Tbsp minced fresh oregano
- 1 clove garlic, minced
- 1 tsp. salt
- 10 oz. short pasta noodles such as penne or rigatoni

Preparation
Step 1
1. In a bowl toss tomatoes, olive oil, basil, oregano garlic and salt. Cover and let stand for 30 minutes.
2. Bring a large pot of salted water to a boil. Cook pasta until al dente, about 10 minutes or as package label directs. Drain pasta and place in bowl with tomatoes. Add Parmesan cheese if desire and stir to combine. Season with additional salt and pepper. Serve immediately.
