Mrs Walkers Pineapple Upside Down Cake (Barb Walker)

  • 1/4 lb Butter
  • 1 cup firmly packed Brown Sugar
  • 1 8 1/2 onc.can sliced pineapple(drain & save the juice
  • 3 Eggs seperated
  • 1 cup Sugar
  • 1 cup Flour
  • 1 tsp Baking Powder



Step 1

Melt the butter in a 9" inch round pan with 3" inch sides.Sprinkle brown sugar on top of melted butter.Place the pineapple rings on brown sugar.Place a cherry half in each ring.You may have to cut some of the pineapple rings to tightly fit.Beat egg yolks till thick.Then beat in sugar and 5 Tbls of the reserved juice.Then sift together the flour and baking powder.Stir it into the egg mixture.Beat the egg whites until stiff.Then gently fold in to the mixture.Poor all this over pineapple and Bake at 350 for 35-40 minutes .Then flip cake while hot.When cool serve with real whipped cream.This is to die for!!
