Ground Beef Patties with Cheese Sauce

Ingredients

  • 1 !2/ lbs very lean ground beef
  • 1 small onion, chopped
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tbls minced parsley
  • 2 eggs
  • Cheese Sauce
  • 2 tbls butter
  • 2 tbls flour
  • 1 cup milk
  • 1 tsp dijon style mustard
  • 1/2 tsp salt
  • 3/4 cup diced swiss or cheddar cheese, about 1/4 lb
  • 1 small fresh tomato
  • for garnish
  • 4 slices mild Cheddar cheese
  • 4 slices fresh tomato

Step 1

Mix ground beef, onion, salt, pepper, parsley, and eggs. Divide into four parts. Shape each into a ball and flatten slightly.
Place into baking dish. Bake at 400 for 20 to 25 minutes or until done to your liking.
While meat bakes, prepare sauce. Melt butter in small pan, and add flour. Over high heat, stir in milk, heat to boiling and whick until thickened. Stir in mustard, salt and cheese. Stir until cheese is melted. Add tomato.
Pour sauce over cooked meat patties. Top with a slice of cheese and a slice of tomato. Return to oven just long enough to heat the tomato and melt the cheese, 3 to 5 minutes. Serve immediately
