Ratatouille-Style Zucchini

Ingredients
- 6 small or 3 large tomatoes (1 1/2 pounds)
- 2 tablespoons olive oil
- 2 medium onions, thinly sliced (3 cups)
- 2 pounds zucchini, halved or quartered and cut into 1-inch-thick sliced
- 1 tablespoon herbes de provence or Italian seasoning

Preparation
Step 1
1. Score bottom of each tomato with small X. Drop tomatoes in large pot of boiling water 10 seconds. Remove tomatoes from pot, cool, and peel. Set aside.
2. Heat oil in large saucepan over medium heat. Add onions, and sauté 7 to 10 minutes, or until soft and translucent. Add zucchini, tomatoes, and herbes de provence, and season with salt and pepper, if desired. Cover and simmer 25 to 30 minutes, or until zucchini is tender and mixture is juicy.
