Ingredients
- Cookies:
- 1 c. shortening
- 1/2 c. granulated sugar
- 1/2 c. packed brown sugar
- 1 1/2 t. pumpkin pie spice
- 1/2 t. baking powder
- 1/4 t. baking soda
- 1 egg
- 1 c. canned pumpkin
- 2 c. all-purpose flour
- Brown Sugar Glaze:
- 1/2 c. packed brown sugar
- 3 T. butter
- 1 T. milk
- 1 c. powdered sugar
- 1 t. vanilla

Preparation
Step 1
Cookies: In medium mixing bowl, beat shortening with electric mixer on med-high speed for 30 seconds. Add both sugars, pumpkin pie spice, baking powder and baking soda. Beat until combined, scraping sides of bowl. Beat in egg and pumpkin. Beat in as much of flour as you can with mixer, then stir in remaining flour. Drop dough by rounded teaspoon, 2" apart on ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes. Cool and spread with brown sugar glaze.
Brown Sugar Glaze: In small saucepan, combine brown sugar, butter and milk. Heat and stir until butter melts. Remove from heat. Stir in powdered sugar and vanilla. Stir until smooth, then spread on cookies.
