Ingredients
- 2 1/2 lbs sweet potatoes, peeled and cut into large pieces
- 3 T extra virgin olive oil
- 1/2 t kosher salt
- 12 t freshly ground black pepper
- 1/4 t ground red pepper
- 1/4 t cinnamon
- 2 T snipped chives

Preparation
Step 1
Preheat oven to 425.
Place the potatoes on a large baking sheeet. Drizzle with the olive oil, salt, pepper, red pepper, and cinnamon. Toss to combine the ingresients.
Bake for about 40 min, until brown and soft, turning twice during cooking.
Sprinkle with chives and salt if desired
