Italian Sausage and Tortellini Soup

Ingredients

  • 1 pound hot or mild Italian sausage
  • 1 large onion; chopped
  • 2 carrots; chopped
  • 4 cups beef or chicken broth
  • 1/2 teaspoon dried Italian herb seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon pepper
  • 8 ounce tomato sauce
  • 19 ounce tomatoes in juice; diced
  • 2 cup mushroom; sliced
  • 10 ounce cheese filled tortellini; fresh or frozen
  • 1/4 cup fresh parsley; chopped
  • 2 tablespoon parmesan cheese; grated

In a large nonstick skillet over medium high heat, cook sausage 8 to 10
minutes, or until browned, stirring to break up meat. With a slotted spoon,
transfer to crockpot. Add onion, carrots, broth, Italian seasoning, salt,
pepper, tomato sauce, tomatoes, and mushrooms.

Cover and cook on High 3 to 4 hours or on Low 6 to 10 hours, or until
vegetables are tender.

Meanwhile, cook tortellini according to package directions. Drain.

Add parsley and tortellini to slow cooker and cook on High 15 to 20
minutes. Spoon into individual bowls and top with grated Parmesan cheese.
