Ingredients
- 1 lb peeled and cubed sweet potatoes
- 1 cup heavy cream
- 1/2 cup sugar
- 4 TBSP melted unsalted butter
- 2 lg eggs
- 1/2 tsp cinnamon
- 1/4 tsp kosher salt
- 9 -in piecrust, unbaked

Step 1
Steam potatoes til tender, 15 to 20 minutes.
Preheat oven to 350.
In a food processor, puree all ingredients til smooth. Pour into piecrust and bake til center is set but still slightly wobbly, 40 to 50 minutes.
Let cool. Dust with confectioners sugar.
