Egg and Artichoke Casserole
Good for Brunch
- 1 bunch been onions
- 2 6oz jars marinated artichoke hearts
- 1 clove garlic
- 4 eggs beaten
- 8 oz medium cheddar cheese grated
- 6 crackers, rolled
Finely mince onions using half of the tops. Cut artichokes in thirds and reserve the liquid.
Sauté onions and garlic in artichoke liquid.
Combine all ingredients. Bake in a 9x9 greased Pyrex pan at 350 for 40 minutes
Serves 4 as a main dish. If you triple the recipe and cut in 2" squares this will serve 30 for Brunch. It does not have to be kept hot while serving. You can make this ahead and refrigerate.
