Ingredients
- Lemon Filling
- 1 1/2 Cup Sugar
- 1 1/2 Cup Water
- 1/3 Cup Cornstarch
- 3 beaten egg yolks
- 3 Tbsp butter
- 1/4 C lemon juice
- 1 Tbsp lemon zest
- Meringue
- 3 beaten egg whites
- 1 Tbsp powdered sugar per egg
- Triple recipe and make in jelly roll pan for large pie.

Preparation
Step 1
Mix first 3 ingredients together and boil 1 minute.
Add egg yolks to sugar mixture
Fold in butter, lemon juice and lemon zest.
Put into cooled pie crust.
Top with meringue & bake at 350 till brown.
Meringue
Beat egg whites til stiff
add powdered sugar
spread onto lemon filling
Bake at 350 till brown
