Anise and Fennel Cookies

  • 2 c. sugar
  • 4 eggs
  • 2 tsp anise extract
  • 3 c. flour, plus extra for rolling
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp anise seed
  • 2 c. confectioners sugar
  • 1 tbsp fennel seed



Step 1

Preheat oven to 350 degrees
In a medium bowl, using a hand mixer, beat sugar, eggs & anise extract until well blended
Sift together 3 c. flour, baking powder & salt, then add to egg mix, 1 c. at a time, beating after each addition
Add anise seed and make sure mixture is well blended

In a separate shallow bowl, mix together confectioner's sugar & fennel seed

Flour hands lightly & roll tablespoon size lumps of dough into balls - roll in confectioners sugar mix until well coated & place on greased baking sheets

Bake for 12 min. - cool for 5 min on baking sheets, then move to wire racks
