Ingredients

  • 1 1/4 cups sugar
  • 2 tbs lemon zest
  • 1/2 cup bottled lemon juice
  • 1/3 cup unsalted butter, cut into small pieces
  • 4 egg yolks
  • 3 large eggs
  • 1 cup water

Preparation

Step 1

1) process sugar in a blender until very fine then transfer it to a 2 quart bowl
2) add remaining ingredients, except water, to the bowl; beat using wisk
3) cover the bowl tightly in aluminum foil
4) pour water into pressure cooker
5) place the bowl into the pressure cooker; secure lid
6) set pressure cooker to rice and timer to 13 minutes
7) when cooking is complete, carefully remove the foil then whisk the ingredients well
8) refrigerate for 1 hour before serving
