Ingredients
- Icing:
- 1 cup oil
- 2 cups sugar
- 3 eggs
- 2 teaspoon vanilla
- 2 1/2 cup flour
- 1 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 2 cups grated carrots
- 1 cup crushed pineapple (not drained)
- 1 cup nuts
- powdered sugar
- cream cheese
- butter
- vanilla

Preparation
Step 1
Mix the first 4 ingredients real well. Add the next 4 ingredients and beat well. Add carrots, pineapple and nuts. Bake 45 to 60 minutes at 350.
When cool cover with the icing.
Icing:
8 oz. cream cheese (softened)
1 tablespoon margarine
1 teaspoon vanilla
enough powdered sugar to the desired thickness
