Ingredients

    cup oil

  • 2

    cups sugar

  • 3

    eggs

  • 2

    teaspoon vanilla

  • 2 1/2

    cup flour

  • 1

    teaspoon salt

  • 1

    teaspoon soda

  • 1

    teaspoon cinnamon

  • 2

    cups grated carrots

  • 1

    cup crushed pineapple (not drained)

  • 1

    cup nuts

  • Icing:

  • powdered sugar

  • cream cheese

  • butter

  • vanilla

Directions

Mix the first 4 ingredients real well. Add the next 4 ingredients and beat well. Add carrots, pineapple and nuts. Bake 45 to 60 minutes at 350. When cool cover with the icing. Icing: 8 oz. cream cheese (softened) 1 tablespoon margarine 1 teaspoon vanilla enough powdered sugar to the desired thickness
