Ingredients
- Topping:
- 2 cups sugar
- 1 1/4 cups oil
- 2.5 cups grated carrots
- 4 eggs
- 2 cups flour
- 2 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon
- dash salt
- 1 cup chopped nuts
- 1 8oz pkg cream cheese, softened
- 1/2 cup butter/margarine, softened
- 2 tsp vanilla
- 2.5 cups icing sugar
- 2 tbsp milk

Preparation
Step 1
Cream sugar and oil; add carrots and eggs. Mix well. Sift together flour, soda, baking powder, cinnamon, and salt, then add to wet mixture. Fold in nuts. Pour in 9x13 pan. Bake at 350F for 45 minutes. Cool.
Frost cake with remaining ingredients, well blended.
