Ingredients

    eggs

  • 1

    ` cup sugar

  • 2/3

    cup pumpkin

  • 1

    teaspoon lemon juice

  • 3/4

    cup flour

  • 1

    teaspoon baking powder

  • 2

    teaspoons cinnamon

  • 1

    teaspoon ginger

  • 1/2

    teaspoon nutmeg

  • 1/2

    teaspoon salt

  • 1

    cup nuts

  • confection sugar

  • FILLING:

  • 1

    cup powdered sugar

  • 2

    pkg. (3 oz.) cream cheese)

  • 4

    tablespoons margarine

  • 1/2

    teaspoon vanilla

Directions

Beat eggs on high speed in mixer 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Add dry ingredients. Spread in greased 15x10x1 pan top with pecans. Bake at 375 for 15 minutes. Turn out onto a towel that had powered sugar all over it. Roll up starting on narrow side. Cool in icebox. Mix up the filling. When cool unroll, spread the filling over the pumpkin roll, roll back up the roll. Chill till ready to serve.
