Savory Cauliflower Pie

Ingredients

  • 3 c ww bread crumbs, toasted
  • sprays of i cant believe its not butter
  • 1 head cauliflower chopped into small florets
  • 1 c onions, finely chopped
  • 1/2 c carrots, thinly sliced
  • 2 garlic cloves minced
  • salt & pepper
  • 1/2 c cheddar cheese, shredded
  • 3 inches chevre, spread over crust
  • 1 T oregano, crushed
  • 2 eggs, beaten
  • 1/2 c egg beaters
  • 1 c low fat buttermilk
  • sprinkle ground nutmeg

Preparation

Step 1

Spray pie pan with PAM, including sides. Press bread crumbs into pie pan using butter spray to help bread crumbs stick to sides of pan. Toast in oven at 275 degrees for 6-8 minutes. Set aside.

In a large skillet saute vegatables & seasonings using PAM, sherry, & chicken broth for 10-15 minutes.

Spread layer of chevre into bottom of pie pan. Place vegetables on top of cheese.

In a bowl beat eggs & buttermilk. Pour over pie.

Sprinkle shredded cheese over top.

Bake uncovered at 375 degrees for 30 minutes or until a knife inserted in middle comes out clean & cauliflower is tender.

Sprinkle with ground nutmeg.
