Coconut Lime Sorbet


More of an intermezzo than a dessert sorbet but can be used as dessert

  • Simple syrup
  • 1 c. water
  • 1 c. white sugar
  • Sorbet
  • 2 c. coconut milk
  • 1 1/4 c. simple syrup
  • 1 c. lime juice
  • 1/2 c. white rum
  • 1/2 bunch mint leaves


Servings 1
Preparation time 10mins
Cooking time 60mins


Step 1

Simple syrup
1) Combine water and sugar, bring to a boil, take off heat and stir until dissolved.
2) Allow to cool to room temperature.
3) Any unused syrup can be stored in the refrigerator for up to one week

1) Puree all ingredients in a blender
2) Freeze in an ice cream machine until frozen

N.B. if you don't have an ice cream machine you can freeze this in a baking pan and make a gratin by scraping up the frozen mix with a fork
