Ingredients

  • 1

    pound shrimp

  • ½

    cup fresh lime juice

  • 5

    roma tomatoes

  • ½

    cup diced red onion

  • 1

    jalapeno pepper-seeded and minced

  • 2

    avacados (firm)-diced

  • 1

    rib celery-diced-

  • chopped fresh cilantro

  • kosher salt and pepper to taste

  • 1

    TBS olive oil

Directions

-Place shrimp in a glass bowl and cover with lime juice to "cook" for 10 minutes -Place all other ingredients in bowl -Remove shrimp and dice. Add to vegetables -Add some reserved lime juice marinade and cilantro and salt/pepper -Toss gently to mix and place in plastic serving cups
