Ingredients

  • 1 can Canellini beans, drained and rinsed
  • 1 can tuna
  • 3 T olive oil (or more)
  • 4 T lemon juice (or more)
  • zest from one lemon
  • Kalmata olives (Trader Joes has them already pitted)
  • 1 red pepper, chopped
  • 1/2 red onion, chopped
  • Baby arugula (add just before serving)
  • Make the day ahead and refrigerate (except arugula)
