Tuscan Tuna Salad

Ingredients
- 1 can Canellini beans, drained and rinsed
- 1 can tuna
- 3 T olive oil (or more)
- 4 T lemon juice (or more)
- zest from one lemon
- Kalmata olives (Trader Joes has them already pitted)
- 1 red pepper, chopped
- 1/2 red onion, chopped
- Baby arugula (add just before serving)
- Make the day ahead and refrigerate (except arugula)

Mix all and refrigerate; add arugula just before serving.
