Sweet Potato Pie

  • 1 lb Sweet Potato
  • 1/2 cup Butter,softened
  • 1/2 cup White Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Evaporated Milk
  • 2 Eggs
  • 2 tsp Flour
  • 2 tsp Lemon Juice
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Ground Cinnamon
  • 1 tsp Vanilla
  • 1 Unbaked Pie Crust (9")

Cooking time 85mins


Step 1

Bake Whole Sweet Potato in the skin for 40 - 50 mins or until done.

Run cold water over the sweet potatoe & remove the skin.

Break apart sweet potato in a bowl.

Add butter & mix well with mixer.

Stir in sugar, milk, eggs, nutmeg, cinnamon, vanilla & lemon juice.

Beat on medium speed until mixture is smooth.

Pour filling into an unbaked pie crust.

Bake at 350 degrees F. for 55 to 60 mins, or until knife inserted in center comes out clean.

Pie will puff up like a souffle & then will sink down as it cools.
